Recipe- Pork and Halloumi Pasta Bake

I had a couple of people asking me for this recipe so thought i'd post it for all. I based it around a recipe from the BBC site.

200g pasta, cooked
1 tbsp olive oil
1 chopped onion
2 cloves of crushed garlic
200g pork mince
1/2 chicken stock cube
3 tbsp butter
2 tbsp plain flour
400ml of milk
1 tsp grated nutmeg
100g halloumi cheese, chopped
salt and pepper

Heat oil in a frying pan and add the onion and garlic and fry until softening. Then add in the pork mince and crumble the stock cube over the top. Cook until the pork is golden brown all over.
In a separate pan, melt the butter and stir in the flour until the mixture forms a paste. Then add the milk a small amount at a time continuously stirring for several minutes until your sauce is smooth. Season to taste with the salt and pepper and then stir in the nutmeg.
Spoon around 1/3 of the white sauce into an ovenproof dish and then add half of the pasta and on top of that put half of the pork mix. Repeat this again, finishing with the last 1/3 of the sauce. Now pop the halloumi on top and pop the dish under the grill for around 10 minutes until the cheese starts to turn golden brown.
Serve!

This would probably be enough for 3-4 people, it was far too much for the 2 of us! The BBC suggests serving it with salad, though we had it with some garlic bread.

  2. ooh i don't eat pork, but i think i may make a quorn version. there is a pack of tempting halloumi in my fridge at present..
